Sliced aubergines are dipped into seasoned flour, then eggs, then breadcrumbs and fried until crisp and golden brown. They are served with a sprinkle of parsley and they can be served with your choice of sauce, such as gravy, ketchup or tomato salsa.
- 2 aubergines
- 2 eggs
- 75g plain flour
- 1 tsp. sweet paprika
- 1 tsp. garlic granules
- 2 tbsp. grated parmesan cheese
- 150g dried breadcrumbs
- Salt and pepper
- Small handful freshly chopped parsley
Peel the aubergine. Slice into 1cm thick slices. Combine flour, paprika and garlic. Beat eggs with salt and pepper. Combine breadcrumbs with parmesan.
Coat aubergine slices in seasoned flour and shake to remove excess. Coat in the egg mixture and then in the breadcrumb mixture.
Heat oil in a heavy frying pan. Add the aubergine slices and fry for 5-6 minutes on either side until golden brown. Sprinkle with parsley to serve.
