Mexican Breakfast Salsa recipe

This salty breakfast salsa is perfect for serving at breakfast with some eggs. Serve on tortillas or with corn-bread, or try frying some cooked and cubed potato to serve with the salsa.

Ingredients

  • 9 rashers bacon
  • 1/2 onion
  • 1 jalapeno chilli
  • 1 tomato
  • 100g passata

Directions

  1. Place the bacon in a large, deep frying pan and cook until evenly brown. Meanwhile, dice the onion and tomato and finely dice the chilli.

  2. Drain the bacon on kitchen paper, leaving behind a little of the bacon fat to cook the onion in.

  3. Cook the onion, tomato and chilli in the bacon fat until soft, around five minutes. Dice the cooked bacon and add the passata.

  4. Simmer for 3-4 minutes until fully heated through, then serve.

Use a smoky streaky bacon. Unsmoked won't give enough flavour and will taste a little bland. This recipe serves six people.
