This delicious broccoli and cheese quiche makes a fantastic party dish or is perfect served for lunch with a large side salad. It's delicious with Gruyere cheese although you can make it with any cheese that you like.
- 1 sheet of shortcrust savoury pastry
- 1 head of broccoli, cut into small florets
- 4 eggs
- 200g creme fraiche
- 1/2 tsp. ground nutmeg
- 1 tsp. each dried thyme and basil
- Salt and black pepper
- 100g grated Gruyere cheese
Roll out the pastry and use it to line a tart tin. Press it evenly into all of the edges of the tin. Prick it all over with a fork. Cover with greaseproof paper and add baking beans, then cook in a 180C oven for 10 minutes. Remove the beans and paper.
Meanwhile, cook the broccoli in boiling salted water for 5 minutes or until tender. Drain really well.
Scatter the broccoli over the bottom of the quiche. Whisk together eggs, creme fraiche, nutmeg, thyme, basil, salt, pepper and cheese. Pour evenly over the broccoli, then put back into the oven and bake for another 30 minutes or until set on top.
