Broccoli with Tomatoes and Basil recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

Broccoli is simmered with tomatoes, olive oil, balsamic vinegar and basil leaves in this delicious Italian-inspired vegetarian side dish.


  • 450g broccoli florets
  • 1 x 400g tin chopped tomatoes
  • 2 garlic cloves, finely chopped
  • 2 tbsp. olive oil
  • 1 tsp. balsamic vinegar
  • Small handful fresh basil leaves
  • Salt and black pepper


  1. Heat oil in a large frying pan. Add the garlic and fry for a minute or two or until fragrant, stirring constantly.

  2. Add the tomatoes, vinegar and basil. Bring to the boil and simmer until the liquid reduces by half. Put the broccoli on top, cover and steam for 10 minutes.

  3. Before serving, stir to combine the broccoli with the tomato sauce.

Top off this delicious side dish with a handful of grated parmesan cheese before serving. Recipe serves 4 as a side dish.
