Broccoli, Walnut and Dolcelatte Pasta recipe

Preparation Time: 15 minutes | Cooking Time: 15 minutes

This easy peasy pasta dish contains just 6 ingredients. It's perfect for midweek as it's just so quick to cook - and it's delicious, too. Don't miss out the lemon juice as it really makes all the difference.

  • 200g pasta shapes of choice
  • 250g broccoli florets (small florets)
  • 2 tbsp. olive oil
  • Juice of 1 lemon
  • Good handful walnuts
  • 100g dolcelatte

  1. Cook the pasta in boiling salted water according to packet instructions. Around 4 minutes before the end of cooking, add the broccoli. Once cooked, drain, reserving 4 tbsp. pasta water.

  2. Heat olive oil in a frying pan and add the walnuts. Toast for 1-2 minutes, then add the cooked pasta and broccoli, the cooking water and the dolcelatte. Heat until the cheese melts around the pasta.

  3. Sprinkle lemon juice all over the dish before serving.

If you like, you could use some cauli or spinach in place of the broccoli. Recipe serves 2 as a main meal.
