This delicious dish is a fantastic way to serve your sprouts with a little extra style. Sprouts are cooked and mixed with cream and fried smoked bacon before being topped with breadcrumbs, cheese and being baked in the oven until crisp.
- 450g Brussels sprouts
- 2-3 rashers thick smoked bacon
- 125ml double cream
- Salt and black pepper
- 4 tbsp. dried breadcrumbs
- 2 tbsp. parmesan and 2 tbsp. grated cheddar cheese
- 2 tbsp. butter
Heat the oven to 200C and grease a baking dish.
Cook the sprouts in a pot of boiling, salted water for about 8 minutes, drain and then plunge into ice water to stop them from cooking. Remove and drain again.
While the sprouts are cooking, fry off the bacon until golden and crisp. Slice the sprouts into halves or quarters and add to the bacon along with the cream. Season well with salt and pepper. Take the pan off the heat and pour into the prepared baking dish.
Sprinkle with breadcrumbs, parmesan and cheddar and bake for 20-25 minutes or until the top is golden and the mix bubbling.
