A yummy way to prepare Brussels sprouts, this recipe will be a hit with the whole family. The sprouts are shredded, then cooked with bacon, butter and a little oil until softened, wilted and delicious.
- 1kg Brussels sprouts
- 225g bacon, smoked
- 100g pine nuts, toasted
- 3 tbsp. butter + 2 tbsp. oil
- Salt and pepper
- 1 onion
Finely dice the onion and the bacon. Core and shred the sprouts.
Heat a little oil in a large frying pan. Heat a little of the oil and fry the bacon and onion over a medium heat until the bacon is golden and the onion translucent.
Add the butter and any additional oil and allow to melt. Add the sprouts and fry for 15-17 minutes, stirring often, making sure that the heat isn't too high until the sprouts are tender and soft. Season with salt and pepper to taste. Toss with the pine nuts to serve.
