Brussels Sprouts and Bacon Saute recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

Bacon and sprouts are fried together in this delicious recipe, but what makes it extra tasty is the toasted slivered almonds, the touch of red wine vinegar to really give it a lift and the garlic for a hint of sweet heat. Yum!

Ingredients

  • 1kg Brussels sprouts
  • 6 rashers smoked streaky bacon
  • 2 tbsp. each finely chopped garlic and red wine vinegar
  • 30g flaked almonds
  • Salt and pepper

Directions

  1. Trim and then thinly shred the sprouts. Finely chop the bacon.

  2. Fry the bacon until browned and releasing oils and then scoop out with a slotted spoon. Drain on kitchen paper.

  3. Add the garlic and almonds to the bacon oil and cook until the almonds are golden and toasted. Add the sprouts and toss to coat them in all of the oil, garlic and almonds.

  4. Add the red wine vinegar and stir to combine and then fry for 5-10 minutes or until the sprouts are wilted and tender.

  5. Stir in the bacon and then season to taste with salt and pepper.

If you don't want to use red wine vinegar, use balsamic or lemon juice. Recipe serves 8.
