Blue cheese really peps up this delicious Brussels sprout dish. Brussels are baked with butter and pine nuts and then dotted with blue cheese, which melts wonderfully over the sprouts.
- 900g Brussels sprouts
- 125g butter
- 4 tbsp. lemon juice
- 4 tbsp. pine nuts
- 1 tsp. salt
- 1/2 tsp. black pepper
- 75g blue cheese
Trim the sprouts and remove any yellow leaves.
Preheat the oven to 180C. Spread the sprouts in a baking dish, dot with butter, season with salt and pepper and sprinkle with lemon juice. Cover. Bake for 25-30 minutes or until tender and scatter with pine nuts for the last 10 minutes of baking.
Stir the sprouts here and then to stop them from sticking. When the sprouts are cooked, crumble the cheese over the top immediately so it can melt a little bit.
