This fresh take on Brussels sprouts will be the perfect centrepiece to your Christmas meal. Sprouts and green beans are pan-fried together and flavoured with fresh lemon juice and zest and served with pine nuts for a bit of crunch!
- 600g Brussels sprouts
- 600g green beans
- 1 tbsp. each oil and butter
- Zest and juice of one lemon
- 4 tbsp. toasted pine nuts
Quarter the sprouts, discarding the outer leaves and trim the beans. Put them in a pot of boiling water and cook for 3 minutes, then drain really well.
Heat the oil and butter together in a large frying pan. When the butter is melted, add the lemon zest and pine nuts. Cook for about 10 seconds until fragrant.
Fry the sprouts and beans for 3-5 minutes or until lightly coloured and golden. Add a little lemon juice and salt and pepper to taste. Taste and add more lemon juice as needed.
