Brussels Sprouts, Green Beans and Pine Nuts recipe

This fresh take on Brussels sprouts will be the perfect centrepiece to your Christmas meal. Sprouts and green beans are pan-fried together and flavoured with fresh lemon juice and zest and served with pine nuts for a bit of crunch!


  • 600g Brussels sprouts
  • 600g green beans
  • 1 tbsp. each oil and butter
  • Zest and juice of one lemon
  • 4 tbsp. toasted pine nuts


  1. Quarter the sprouts, discarding the outer leaves and trim the beans. Put them in a pot of boiling water and cook for 3 minutes, then drain really well.

  2. Heat the oil and butter together in a large frying pan. When the butter is melted, add the lemon zest and pine nuts. Cook for about 10 seconds until fragrant.

  3. Fry the sprouts and beans for 3-5 minutes or until lightly coloured and golden. Add a little lemon juice and salt and pepper to taste. Taste and add more lemon juice as needed.

If you prefer, add the pine nuts right at the very end and they'll stay extra crunchy. A little bit of basil would also be delicious. Recipe serves 4.
