Brussels Sprouts, Sausage and Sweet Onion Saute recipe

Brussels sprouts, herby, meaty sausage and sweet red onions are all fried together until tender and delicious in this really simple recipe. It's perfect for winter with a big portion of mashed potatoes.


  • 400g Brussels sprouts
  • 450g herby pork sausages
  • 2 red onions
  • 2 tbsp. each butter and oil
  • 50ml balsamic vinegar
  • Salt and pepper
  • 1 rasher bacon
  • 1 tbsp. oil


  1. Trim the sprouts and quarter. Slice the pork sausages into rounds and thinly slice the red onions.

  2. In a large pot, fry the bacon in 1 tbsp. oil until golden and releasing oils. Scoop out with a slotted spoon and set to one side. Add the sprouts and sausages and fry for 15-20 minutes or until golden and tender.

  3. Meanwhile, fry the onions in the butter and oil until very soft, around 20 minutes. Add the vinegar and cook for another 5 minutes or until the vinegar thickens. Transfer the onion mix to the sprouts and fry for another 4-5 minutes or until all of the flavours are combined.

Reduce a little extra balsamic to use as a yummy sauce if you like. Recipe serves 4.
