Brussels sprouts, herby, meaty sausage and sweet red onions are all fried together until tender and delicious in this really simple recipe. It's perfect for winter with a big portion of mashed potatoes.
- 400g Brussels sprouts
- 450g herby pork sausages
- 2 red onions
- 2 tbsp. each butter and oil
- 50ml balsamic vinegar
- Salt and pepper
- 1 rasher bacon
- 1 tbsp. oil
Trim the sprouts and quarter. Slice the pork sausages into rounds and thinly slice the red onions.
In a large pot, fry the bacon in 1 tbsp. oil until golden and releasing oils. Scoop out with a slotted spoon and set to one side. Add the sprouts and sausages and fry for 15-20 minutes or until golden and tender.
Meanwhile, fry the onions in the butter and oil until very soft, around 20 minutes. Add the vinegar and cook for another 5 minutes or until the vinegar thickens. Transfer the onion mix to the sprouts and fry for another 4-5 minutes or until all of the flavours are combined.
