Buttered Parsnips recipe

Preparation Time: 10 minutes | Cooking Time: 45 minutes

A super simple way to prepare parsnips, parsnips are boiled until tender, then mashed and cooked with a little butter, salt and pepper. Deliciously sweet and soft, these parsnips work well with roast chicken, beef and turkey.


  • 500g parsnips
  • 60g butter
  • Salt and pepper


  1. Peel the parsnips if needed and dice. Place into a pan of cold salted water, bring to the boil and reduce to a simmer. Cook for 30-40 minutes or until tender.

  2. Drain and return to the saucepan over a low heat to cook out some of the moisture. Cook for 3-4 minutes.

  3. Mash using a potato masher, adding butter a little at a time until the butter is completely incorporated into the parsnips. Either mash them until smooth or keep a little bit of texture. Season to taste with salt and pepper.

For extra richness, add a little cream to the parsnips while mashing them, or for extra flavour, add a garlic clove or two. Recipe serves 4.
