Buttered Samphire recipe

Preparation Time: 5 minutes | Cooking Time: 7 minutes

This is the simplest way to prepare samphire - and it is incredibly delicious. Samphire is boiled until tender, then served with butter and black pepper. Serve it with lightly fried fish for a wonderfully simple dinner that tastes of the sea.


  • 200g samphire
  • 2-3 tbsp. butter
  • Black pepper
  • Lemon juice


  1. Chop any woody ends off of the samphire. Drop into a pan of boiled salted water and boil for 5-7 minutes until tender. Drain well so that the samphire isn't watery.

  2. Place samphire onto a platter and dot with butter. Toss using serving forks until the melted butter coats the samphire. Season with black pepper and toss, then sprinkle with lemon juice to taste.

You might also want to add a little garlic to the samphire - it will add bite and oomph to the dish. Recipe serves 2.
