This is the simplest way to prepare samphire - and it is incredibly delicious. Samphire is boiled until tender, then served with butter and black pepper. Serve it with lightly fried fish for a wonderfully simple dinner that tastes of the sea.
- 200g samphire
- 2-3 tbsp. butter
- Black pepper
- Lemon juice
Chop any woody ends off of the samphire. Drop into a pan of boiled salted water and boil for 5-7 minutes until tender. Drain well so that the samphire isn't watery.
Place samphire onto a platter and dot with butter. Toss using serving forks until the melted butter coats the samphire. Season with black pepper and toss, then sprinkle with lemon juice to taste.
