Buttery Buttermilk Pancakes recipe

Buttermilk helps to make these pancakes extra fluffy, while the butter gives them a delicious rich flavour. They're perfect with sweet toppings but they also work brilliantly with some salty smoked bacon, too.


  • 125g plain flour
  • 1 tsp. bicarbonate of soda
  • 1 tsp. salt
  • 1 egg
  • 250ml buttermilk
  • 50ml melted butter


  1. Sift together the flour, bicarb and salt. Add the egg, buttermilk and butter and stir together until just combined. Don't over-mix. Batter should look thick and spongy.

  2. To cook, heat a frying pan over a medium heat, then add butter or oil. Drop around 75ml of the batter into the pan and spread out lightly with a spoon. Fry for 1-2 minutes on either side or until golden brown.

For flavoured pancakes, add a drop of vanilla extract, or you choice of fruit. Recipe makes around 6 pancakes.
