Buttermilk is the secret ingredient in this recipe, which makes the chicken incredibly tender and almost melt in your mouth. It tastes just like restaurant fried chicken but for a fraction of the cost.
- 1 chicken, cut into portions, ready to cook
- 250g buttermilk
- 250g plain flour
- 2 tsp. paprika
- 1/2 tsp. each salt and pepper
- Oil to fry
Combine flour, paprika, salt and pepper in a bowl. Dip chicken first into buttermilk and then into the flour mix. Put onto a greaseproof lined baking tray and cover. Set to one side until the flour on the chicken turns pasty.
To cook, heat oil in a large frying pan. Add the chicken and fry until golden and crisp on all sides, then transfer to a baking tray and bake at 190C for 20-30 minutes or until the chicken is cooked through.
