Buttermilk Paprika Fried Chicken recipe

Preparation Time: 1 hours | Cooking Time: 30 minutes

Buttermilk is the secret ingredient in this recipe, which makes the chicken incredibly tender and almost melt in your mouth. It tastes just like restaurant fried chicken but for a fraction of the cost.

  • 1 chicken, cut into portions, ready to cook
  • 250g buttermilk
  • 250g plain flour
  • 2 tsp. paprika
  • 1/2 tsp. each salt and pepper
  • Oil to fry

  1. Combine flour, paprika, salt and pepper in a bowl. Dip chicken first into buttermilk and then into the flour mix. Put onto a greaseproof lined baking tray and cover. Set to one side until the flour on the chicken turns pasty.

  2. To cook, heat oil in a large frying pan. Add the chicken and fry until golden and crisp on all sides, then transfer to a baking tray and bake at 190C for 20-30 minutes or until the chicken is cooked through.

If you like things spicy - or if you want to add colour to your chicken, add turmeric and chilli powder. Recipe serves 4.
