This recipe might sound a little unusual, but combining crunchy sprouts with sweet and delicious grapes will create a deliciously sweet side dish perfect for serving alongside roasted meats.
- 900g Brussels sprouts
- 160g red grapes, seedless
- 4 garlic cloves
- 4 tbsp. extra-virgin olive oil
- 4 shallots
- 60g butter
- 500ml water
- 1 tsp. salt
- 1/2 tsp. black pepper
Boil the sprouts in the water and salt for 8-10 minutes or until tender. Drain and plunge into ice water to stop the cooking process, then drain again.
Meanwhile, halve the grapes and crush the garlic cloves. Finely chop the shallots.
Heat the oil over a medium heat and add the garlic and shallots. Cook gently for 5 minutes or until golden, soft and sweet. Add the sprouts, butter and grapes, then cook slowly for another 10-15 minutes or until soft and delicious.
