A deliciously savoury way to serve asparagus, in this recipe, asparagus is sauteed in a lovely mixture of butter, olive oil and fresh garlic cloves. Popular in northern Italy, this is a fabulous side dish - finish it off with a tbsp. of toasted pine nuts for true Italian flair.
- 500g asparagus
- 50g butter
- 3 garlic cloves
- 2 tbsp. extra-virgin olive oil
- 1 tsp. sea salt
- 1/4 tsp. cracked black pepper
Snap the woody ends off of the asparagus. Mince the garlic cloves.
Heat butter and oil in a large frying pan. Add salt, pepper and garlic. Fry the garlic for one minute over a medium heat, but don't let it brown.
Add the asparagus spears and toss in the butter and oil. Fry for 5-8 minutes or until tender and cooked to your liking, turning often.
