Cabbage Fritters recipe

Preparation Time: 30 minutes | Cooking Time: 15 minutes
A different way to use cabbage, this is a brilliant recipe for vegetarians as it's substantial yet light. Serve these fritters with a little bit of tomato salsa, or make them thick to serve as a burger.


  • 1/2 head of cabbage
  • 1 onion
  • 325ml natural yoghurt
  • 150ml milk
  • 250g plain flour
  • 2 eggs
  • 4 tsp. baking powder
  • 1 tsp. bicarbonate of soda
  • 1 tsp. butter
  • 4 tbsp. vegetable oil
  • 1 tsp. black pepper
  • 1 tsp. salt


  1. Shred the cabbage and thinly slice the onion into half moons. Heat a little oil in a frying pan and fry the cabbage and onions in it until tender and the onion golden and translucent.

  2. Whisk together the eggs and flour, caking powder and bicarb until smooth. Gradually whisk in the milk until smooth and fold in the yoghurt. Beat in the butter, oil, black pepper and salt until you have a smooth batter. Fold in the cabbage and onions.

  3. To cook, heat a little oil in a frying pan and drop the batter in by the spoonful. Cook until golden and then flip. Continue until you've used all of the batter.

For a little extra flavour, consider adding some mixed dried herbs to the batter. Parsley would work well. Recipe serves 4 as a starter.
