Easy Fluffy Canadian Pancakes recipe

Preparation Time: 20 minutes | Cooking Time: 10 minutes

These pancakes use just four ingredients and they end up fluffy and soft - perfect for mopping up syrup and jam. They're also brilliant with bacon and a poached egg on top, too!

Ingredients

  • 100g plain flour
  • 3 eggs, separated
  • 1 tbsp. baking powder
  • 225ml milk

Directions

  1. Whisk together flour and baking powder. Whisk together egg yolks and milk. Gradually whisk the milk mix into flour mix until well combined and lump-free.

  2. Whisk the egg whites until soft peaks form, then gently fold the whites into the pancake batter. Be careful not to knock the air out of the batter.

  3. Lightly grease a frying pan and heat over a medium heat. Drop 4 tbsp. of the batter onto the frying pan and cook until bubbles appear on the top of the pancake. Flip and fry for another 1-2 minutes or until golden brown on either side.

If you like, add some blueberries, raspberries or redcurrants to the pancakes. Recipe makes around 6 pancakes.
