These pancakes use just four ingredients and they end up fluffy and soft - perfect for mopping up syrup and jam. They're also brilliant with bacon and a poached egg on top, too!
- 100g plain flour
- 3 eggs, separated
- 1 tbsp. baking powder
- 225ml milk
Whisk together flour and baking powder. Whisk together egg yolks and milk. Gradually whisk the milk mix into flour mix until well combined and lump-free.
Whisk the egg whites until soft peaks form, then gently fold the whites into the pancake batter. Be careful not to knock the air out of the batter.
Lightly grease a frying pan and heat over a medium heat. Drop 4 tbsp. of the batter onto the frying pan and cook until bubbles appear on the top of the pancake. Flip and fry for another 1-2 minutes or until golden brown on either side.
