Show off in the kitchen with this deceptively difficult poached pear dish. Pears are poached in a caramel-flavoured liquid, then served with a creamy almond sauce made with storecupboard ingredients. Yum!
- 2 medium pears, cored, peeled, halved
- 1 vanilla pod
- 100g brown sugar
- Juice of 1 lemon
- 250ml water
- 100g mascarpone cheese
- 100ml custard
- 3 tbsp. almond liquor
- Pinch each nutmeg and cinnamon
Halve the vanilla pod. Place the vanilla, sugar, lemon juice and water into a saucepan and mix together. Stir over a medium heat or until the sugar dissolves. Bring to the boil, then boil for five minutes. Add the pears, reduce the heat and simmer for 10 minutes or until the pears are tender.
Whisk together the mascarpone, custard, almond liquor and nutmeg and cinnamon. Serve the pears with the sauce, with a little of the poaching liquor if desired.
