Cauliflower Cheese Soup recipe

Cauliflower cheese is loved by everyone, so bring it bang up to date in this tasty soup.

Ingredients

  • 1 head of cauliflower
  • 1 onion
  • 1 potato
  • 700ml vegetable stock
  • 400ml milk
  • 100g mature cheddar cheese
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • Salt and pepper

Directions

  1. Finely chop the onion and chunk the potato. Chop the cauliflower into florets. Grate the cheese.

  2. Heat the butter and oil in a large pan and cook the onion for around five minutes or until translucent. Add the cauliflower, potato, stock and milk, season well, and then bring the mixture to a simmer for 30 minutes.

  3. Blend the soup until smooth and creamy.

  4. Top the soup with cheese to serve.
