Celeriac Coleslaw recipe

Preparation Time: 20 minutes

Crisp and crunchy, celeriac works well in all sorts of salads and is fantastic raw or cooked - a little bit like fennel. Here, it adds flavour and texture to a simple coleslaw.

  • 1/2 celeriac
  • 1 sweet apple
  • 1 carrot
  • 3 tbsp. mayonnaise
  • 2 tbsp. natural yoghurt
  • 1 tbsp. white wine vinegar
  • 1 tsp. Dijon mustard
  • Salt and pepper to taste

  1. Peel the skin from the celeriac using a sharp knife. Slice into thin matchsticks. Remove skin and core from the apple and slice into matchsticks, then slice the carrot in the same way.

  2. Mix mayo, yoghurt, vinegar, mustard and salt and pepper to taste in a bowl. Add the celeriac, apple and carrot, then toss to combine. Chill until ready to serve.

For extra flavour, why not add a pinch of curry powder or a finely sliced red onion. Recipe serves 4.
