Celeriac in Garlic and Tomato Sauce recipe

Preparation Time: 20 minutes | Cooking Time: 65 minutes

Celeriac is simmered very gently in a garlicky tomato sauce made with storecupboard ingredients in this delicious side dish recipe. Make it a little more substantial by adding more veggies and some chopped lean bacon.

  • 1 celeriac
  • 1 400g tin chopped tomatoes or 400g passata
  • 2 onions
  • Oil
  • Salt, pepper and sugar
  • 1 tbsp. chopped sage
  • 2 garlic cloves

  1. Thinly slice the onions. Peel the celeriac and chop into small cubes. Mince the garlic.

  2. Heat oil in a large saucepan and add the onions. Fry for 5-7 minutes or until softened and golden. Mince the garlic and fry for a minute or two until fragrant, then add chopped tomatoes and a pinch each of salt, pepper and sugar. Stir in the sage. Cover and simmer over a low heat for 30-40 minutes or until thickened, stirring occasionally.

  3. Add the celeriac, cover and simmer for a further 25 minutes or so, or until the celeriac is tender.

For extra heat, omit the sage and add a fresh chilli or two to the tomato sauce. Recipe serves 2-4.
