Celeriac and Walnut Gratin recipe

Preparation Time: 20 minutes | Cooking Time: 1 hours

Celeriac is sliced very thinly, then baked in the oven with veg stock and walnut oil before being topped with creamy blue cheese and walnuts in this fabulous recipe. Serve as part of a roast dinner or alongside a roast chicken.


  • 1 celeriac
  • 100ml veg stock
  • 50ml double cream
  • 2 tbsp. walnut oil
  • Salt and pepper
  • Handful walnuts
  • 100g blue cheese


  1. Peel the celeriac, chop, then thinly slice either using a mandolin or on the slicing attachment of a processor. Toss the celeriac with walnut oil and plenty of salt and pepper and layer in a gratin dish.

  2. Mix together the veg stock and cream and pour over the celeriac. Bake at 170C for 40-45 minutes, then sprinkle with walnuts and crumble on the blue cheese. Bake for another 10-15 minutes or until the celeriac is tender, the nuts golden and the cheese melted.

You could also add a little bit of bacon to the dish when you add the nuts and cheese. Recipe serves 4.
