Love it or hate it, marmite gives these delicious pasties a wonderful savoury edge - while the cheesy potato filling is gooey, filling and flavoursome. Perfect for picnics, these pasties are particularly good warm from the oven.
- 500g shortcrust pastry
- 2 tbsp. marmite
- 500g potatoes, peeled, grated
- 200g strong mature cheddar cheese, grated
- 100g breadcrumbs, fresh
- Bunch spring onions, ends removed, thinly sliced
- 1/2 tsp. each salt and black pepper
- 2 eggs, beaten
Mix the potatoes, cheese, breadcrumbs, spring onions, salt, pepper and 1 egg in a bowl.
Roll the pastry out to the thickness of a £1 coin on a floured worktop, then cut into 16-17cm circles. Melt the marmite with a drop of water in the microwave until runnier, then spread onto the pastry circles, leaving a border of around 2-3cm around the edge of each circle.
Pile the filling into the centre of each pastry circle. Brush a little of the egg around the edge, then bring the two sides of the pastry up over the filling, crimp and pinch to seal, then place onto a baking tray. Brush with the rest of the egg and bake at 140C for 50-60 minutes or until golden and crisp on the outside.
