These wonderful cheesy chips are seasoned, baked and topped with crumbled bacon and sliced spring onions. Perfect with chicken or baked fish.
- 4 medium potatoes
- 2 tbsp. olive oil
- 2 tsp. sweet paprika
- 1/2 tsp. each chilli powder, onion powder and garlic powder
- 1/4 tsp. ground cumin
- Salt and pepper
- 4 slices bacon, grilled and crumbled
- 4 spring onions, thinly sliced
- Large handful grated mature cheddar cheese
Slice the potatoes into 1/4 inch chips. Add to a bowl. Toss with olive oil, paprika, chilli powder, onion powder, garlic powder, cumin and salt and pepper. Spread in a single layer on a baking tray or two and bake in a 200C oven for 25 minutes or until golden and cooked through, turning half way through cooking.
Sprinkle chips with bacon, spring onions and cheese and bake until the cheese melts, around another 2-3 minutes. Serve straight from the oven.
