Simple coleslaw is made extra-special with the addition of some strong smoked cheese and some oniony chives. Serve as part of a party spread or in place of your usual coleslaw.
- 1 white cabbage
- 1 red onion
- 1 carrot
- 1 celery stalk
- Small handful chives, snipped
- 3 tbsp. each mayo and natural yoghurt
- 1 tsp. Dijon mustard
- 1 tbsp. extra-virgin olive oil
- 1 tbsp. lemon juice
- 100g smoked cheddar cheese
Finely shred the cabbage and discard the core. Slice the carrot into thin matchsticks and thinly slice the celery. Thinly slice the onions into half moons.
Whisk together the mayo, yoghurt, mustard, oil and lemon juice. Season to taste with salt and pepper.
Pour the dressing over the thinly sliced veggies and toss to coat. Just before serving, fold in the cheese and chives.
