A little bit like a savoury bread pudding, this recipe combines leeks, tomatoes, bread, cheese and eggs to create a delicious bake that's just perfect for a midweek dinner. Serve with chips and a good helping of ketchup.
- 200g crusty white bread
- 25g butter + a knob
- 2 leeks
- 2 garlic cloves
- 100g cherry tomatoes
- 4 eggs
- 200ml milk
- 100g mature cheddar cheese, grated
- Black pepper
Heat the oven to 180C. Halve and thinly slice the leeks. Thinly slice the garlic cloves and halve the cherry tomatoes.
Grease a baking dish with a knob of butter. Tear the bread into chunks.
Fill the baking dish with the torn bread. Melt the rest of the butter in a large pan and add the leeks and garlic. Fry for 5 minutes, stirring often, until soft. Scatter over the bread and top with tomatoes.
Whisk together eggs, milk, cheese and a good pinch of black pepper. Pour evenly over the bread and veggies, then bake for 15-20 minutes or until the bread is golden and slightly risen.
