Cherry Fridge Cake recipe

Preparation Time: 15 minutes | Cooking Time: 10 minutes

Fridge cakes are a wonderful treat - chocolate, butter and syrup melt together to enrobe biscuits, cherries and nuts, in this version. Simply mix everything together and pop in the fridge til set, it's that simple!


  • 200g butter
  • 250g milk chocolate
  • 4 tbsp. golden syrup
  • 500g digestive biscuits (or any butter biscuit)
  • 150g maraschino cherries or glace cherries
  • 50g mixed chopped nuts


  1. Melt the butter, chocolate and golden syrup together in a bowl over a pan of barely simmering water.

  2. Meanwhile, place the biscuits into a heavy duty freezer bag and bash with a rolling pin until they form chunky crumbs.

  3. Stir the fruit and nuts into the chocolate and then fold in the digestive crumbs. Spread into a cling-lined tin and put into the fridge until set. To serve, slice into squares.

Swap the mixed nuts for whole pecans or walnuts and the maraschino cherries for fresh, if you prefer. Recipe serves 8-10.
