Fridge cakes are a wonderful treat - chocolate, butter and syrup melt together to enrobe biscuits, cherries and nuts, in this version. Simply mix everything together and pop in the fridge til set, it's that simple!
- 200g butter
- 250g milk chocolate
- 4 tbsp. golden syrup
- 500g digestive biscuits (or any butter biscuit)
- 150g maraschino cherries or glace cherries
- 50g mixed chopped nuts
Melt the butter, chocolate and golden syrup together in a bowl over a pan of barely simmering water.
Meanwhile, place the biscuits into a heavy duty freezer bag and bash with a rolling pin until they form chunky crumbs.
Stir the fruit and nuts into the chocolate and then fold in the digestive crumbs. Spread into a cling-lined tin and put into the fridge until set. To serve, slice into squares.
