This super simple low-fat cherry and lemon clafoutis is packed with flavour and takes just 10 minutes to prepare and 30 minutes to cook - perfect if last minute guests turn up at your door! Serve with lashings of double cream or vanilla yoghurt, if you're trying to be good!
- 450g cherries, stoned
- 450ml skim milk
- 50g plain flour
- 2 tbsp. cherry jam
- 3 eggs
- Zest and juice of 1 lemon
- 3 tbsp. caster sugar
Preheat oven to 170C and grease a 1.3litre baking dish.
In a pan, heat the cherries and jam together until the cherries start to soften and let out a little juice. Pour into the prepared baking dish and top with lemon zest and juice.
In a food processor, combine the flour, eggs, milk and sugar and process until smooth. Pour over the cherry mix and bake in the prepared oven for 30 minutes or until golden and set.
