Cherry Oat Toffee Cookies recipe

Preparation Time: 1 hour | Cooking Time: 10 minutes

Dried cherries are mixed with a delectable combination of toffee pieces, chocolate, oats and vanilla in this easy peasy recipe. We use milk chocolate, although you can add dark or white chocolate depending on your tastes.

  • 225g butter
  • 200g plain flour
  • 150g each brown sugar and caster sugar
  • 120g porridge oats
  • 1 egg
  • 1 tsp. bicarbonate of soda
  • 150g each dried cherries, chopped toffee pieces and milk chocolate chips or chocolate chopped into pieces

  1. Sift together the flour and bicarb. In a bowl, cream the sugar, brown sugar and butter together until pale and fluffy, then beat in the egg. Sift in the flour mix, then stir in the oats. Fold in the cherries, toffee and chocolate. Pat into 3 balls and roll into logs of about 5cm in diameter. Wrap in cling and freeze until firm.

  2. Preheat oven to 180C and grease baking trays. Slice cookie logs into 2cm thick slices and lay on baking trays. Bake them about 5cm apart so they can spread.

  3. Bake for 10 minutes or until just golden and browned. Enjoy warm from the oven.

These cookies are particularly good warm from the oven, but they're also tasty when cooled. If you're going to store them, make sure you keep them in an airtight box otherwise they'll go stale. Recipe makes 36 cookies.
