Chewy, light and fluffy, these cherry scones will make a wonderful addition to your next cream tea! Serve with clotted cream, cherry jam and a great big pot of tea for a very cherry treat.
- 240g self-raising flour
- 100ml milk
- 100g glace cherries (or dried, or maraschino, or you could use fresh), halved
- 2 tbsp. caster sugar
- 2 tsp. baking powder
- 1 egg
- 60g butter
- Pinch of salt
Preheat oven to 230C.
Sift together flour, salt and baking powder into a bowl. Stir in the sugar. Rub the butter in with the tips of your fingers to form breadcrumbs, then stir in the egg and milk. Fold in the cherries and knead with floured hands on a floured worktop to form a dough.
Roll the dough out to 1cm thick, then use a 5cm circle cutter to cut into scones. Place onto baking tray and bake for 10 minutes or until golden.
