Chewy Chocolate and Coconut Cookies recipe

Chewy cookies are the best - soft, crumbly and super more-ish, these chewy chocolate and coconut cookies will be a hit with everyone. Made with brown sugar for a hint of fudgy flavour and white chocolate chips, these cookies are super simple to make too.


  • 150g plain flour
  • 110g each brown sugar, caster sugar and butter
  • 1 egg
  • 1/2 tsp. each bicarbonate of soda, salt and vanilla extract
  • 100g each desiccated coconut and white chocolate chips or chunks


  1. Preheat oven to 180C and grease a few baking trays.

  2. In a large bowl, beat together the sugars and butter until pale and fluffy. Beat in the egg until fully combined. Sift in the flour, bicarb and salt and stir until smooth. Fold in the vanilla, coconut and chocolate chips.

  3. Drop the cookie mix by the teaspoonful onto the baking trays leaving 2-3 inches between cookies. Bake for 8-10 minutes or until lightly browned. Leave to cool to the touch, then cool on wire racks.

Replace 100g of the flour with rolled oats for an oaty texture, or try adding dark or milk chocolate chips in place of the white chocolate chips. Recipe makes around 28 cookies.
