A wonderfully healing soup that's easy to make and packed with flavour. In this recipe, cabbage, celery, carrots and tomatoes simmer in a simple seasoned chicken broth until tender. Perfect for winter or if you're feeling a little under the weather.
- 1/2 head Savoy cabbage
- 1 x 400g chopped tomatoes
- 2 litres chicken stock
- 1 onion
- 2 carrots
- 2 celery stalks
- 2 garlic cloves
- 1 tsp. each salt and black pepper
- 1 tsp. dried mixed herbs
Remove the outer leaves from the cabbage and thinly shred. Slice the onion into half moons, thinly slice the carrots and thinly slice the celery stalks, removing any stringy bits. Slice the garlic cloves thinly.
Heat a little oil in a large saucepan. Add the onion and fry for 5 minutes or until lightly golden. Stir in the garic and fry for a couple of minutes. Add the carrots, celery and cabbage, stir and cook for 5 minutes. Add the chicken stock, tomatoes, salt, pepper and herbs. Simmer for 10-15 minutes or until all of the veggies are tender.
