This yummy chicken dish is perfect midweek fare. The creamy vodka sauce, flavoured with feta, is particularly delicious with the chicken but would work just as well over roast potatoes.
- 75g butter
- 8 chicken breasts
- 1 onion
- 1 garlic clove
- 4 tbsp. vodka
- 1 tbsp. plain flour
- 1 tbsp. tomato puree
- 175ml chicken stock
- 1/2 tsp. each salt and pepper
- 2 tbsp. freshly chopped parsley
- 350ml soured cream
- 4 tbsp. crumbled feta cheese
Mince the onion and garlic clove. Melt half the butter in a large frying pan and fry the chicken until no longer pink in the middle on either side, then pop into a baking dish.
Add the remaining butter to the pan and once melted, add the onion and garlic. Fry over a low heat until the onions are soft and tender. Add the flour, stir and cook for 5 minutes, then add the vodka, tomato puree, chicken stock, salt, pepper, parsley, soured cream and feta. Reduce heat to low, stir and simmer for 20 minutes, then pour over the chicken and bake at 180C for 20 minutes or until the chicken is tender.
