This cheat's version of a traditional satay dish uses peanut butter and shop bought black bean sauce to create an easy yet delicious midweek meal that the whole family will love.
- 250g egg noodles, straight to wok
- 2 tbsp. veg oil
- 4 chicken breasts, trimmed and chopped
- 200g mangetout
- 4 spring onion, trimmed and sliced
- 125ml black bean sauce
- 4 tbsp. crunchy peanut butter
- 1/2 tbsp. toasted sesame seeds
- 2 tbsp. oil
Cook noodles according to packet instructions.
Heat oil in a large frying pan or wok until very hot. Add the chicken and cook for 5-8 minutes, or until browned and no longer pink in the middle.
Take out of the pan in a slotted spoon. Add the mangetout and spring onions and stir fry for a further 2-3 minutes.
Reduce heat, then add the peanut butter and black bean sauce and cook and stir until the sauce and veggies combine. Add the chicken and noodles and heat through.
Sprinkle with sesame seeds to serve.
