Chicken Nacho Grills recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

This simple recipe will yield tender, soft chicken with an oozy gooey cheesy topping. Sour cream flavoured with chives and onion finishes the dish off nicely.


  • 4 chicken breast fillets
  • 4 tbsp. lime juice + 2 tbsp. olive oil + small handful freshly chopped coriander
  • 4 tbsp. mild tomato salsa
  • 40g tortilla chips (you can use plain or if you like, cool flavour, cheese or chilli flavour)
  • 60g grated cheddar cheese
  • 4 tbsp. sour cream
  • 1 tbsp. grated onion
  • 1 tbsp. minced chives
  • Salt and pepper


  1. Combine the lime juice, olive oil and chopped coriander. Add the chicken breasts, toss to coat and leave to marinate for ten minutes. Lay the chicken breasts in an oven dish and drizzle over any leftover marinade.

  2. Top each chicken breast with 1 tbsp. salsa. Crush the tortilla chips and sprinkle over the chicken, then top with the cheese. Bake for 20 minutes until the chicken is cooked through and the cheese golden and melted.

  3. Stir the onion and chives into the sour cream and serve on the side of the chicken.

If you want to, add some fresh chilli or jarred jalapeno chilli to the salsa for extra heat and flavour. Recipe serves 4.
