Chicken Satay Noodles recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Noodles are tossed with chicken, soy sauce, peanuts, chillies and some veggies in this delicious recipe. If you like, serve with extra lime wedges to squeeze over the noodles.


  • 450g cooked noodles
  • 4 chicken breasts
  • 125g chopped peanuts
  • 2 heads of pak choi
  • 3 garlic cloves
  • 1 thumb-sized piece root ginger
  • 2 red chillies
  • Zest and juice of 1 lime
  • 1 red pepper
  • Small handful freshly chopped coriander
  • 2 tbsp. soy sauce
  • Oil


  1. Mince the garlic and ginger. Slice the chillies in half, remove the seeds with the back of your knife then finely dice the flesh.

  2. Slice the chicken into strips. Slice the pepper in half and remove the seeds and pith, then thinly slice the flesh. Roughly chop the pak choi leaves.

  3. Combine peanuts, chillies, lime zest, garlic, ginger, coriander and a little salt in a food processor. Blend until smooth. Heat a little oil in a wok and add the peanut mixture. Stir fry for 1 minute.

  4. Add the chicken and fry until it starts to brown, then add the pak choi and red pepper. Fry for a minute or two until softened, then add the soy sauce and lime juice. Allow the liquid to bubble slightly.

  5. Add the noodles and stir to combine. Cook for a couple of minutes then serve.

If you like, sprinkle with some extra chopped peanuts before serving for a bit of added crunch. Recipe serves 4.
