This is another wonderfully refreshing soup, perfect for hot summer's days.
- 2 avocados
- Zest of half an orange
- Zest of a lemon
- 1 thumb-sized piece of fresh ginger
- Salt and pepper
- 600ml milk
Peel and stone the avocados and mash them with a fork.
Chop the ginger into small chunks.
Place the avocados, zest of orange, zest of lemon, chopped ginger and some salt and pepper into a blender. Blitz until smooth.
Add the milk into the blender in a thin stream, blending until you have a smooth consistency.
Pour the soup into a bowl or a jug and keep in the fridge until you’re ready to serve it.
