Chilled Avocado Summer Soup recipe

This is another wonderfully refreshing soup, perfect for hot summer's days.


  • 2 avocados
  • Zest of half an orange
  • Zest of a lemon
  • 1 thumb-sized piece of fresh ginger
  • Salt and pepper
  • 600ml milk


  1. Peel and stone the avocados and mash them with a fork.

  2. Chop the ginger into small chunks.

  3. Place the avocados, zest of orange, zest of lemon, chopped ginger and some salt and pepper into a blender. Blitz until smooth.

  4. Add the milk into the blender in a thin stream, blending until you have a smooth consistency.

  5. Pour the soup into a bowl or a jug and keep in the fridge until you’re ready to serve it.
