Celeriac is cooked down with red onions and garlic cloves, along with a dash of white wine in this simple yet effective recipe. Serve with some spiced chicken wings and a dollop of natural yoghurt as a dip.
- 1 celeriac
- 2 red chillies
- 4 garlic cloves
- 4 tbsp. oil
- Splash of white wine or water
Peel the celeriac and chop into small cubes. Thinly slice the garlic. Halve the chillies, remove the seeds with the back of a knife and thinly slice. Put the celeriac, chilli, garlic and oil into a large saucepan and heat gently so that the oil coats everything.
Cover, and cook over the lowest heat on the smallest ring, for 40-50 minutes, stirring occasionally until the celeriac is soft. Add wine or water every now and then if the veggies catch. Serve warm straight from the pan.
