Chilli Lemon Pork and Mangetout recipe

Preparation Time: 15 minutes | Cooking Time: 25 minutes

This tasty recipe for pork and mangetout cooked with lemon, chilli, sesame seeds and sesame oil has just the right amount of heat. Serve over noodles.

  • 350g pork fillet, sliced
  • 100g sesame seeds, toasted
  • 2 shallots, sliced
  • 2 red chillis, deseeded and very thinly sliced
  • Zest and juice of 1 lemon
  • Oil
  • 1 tbsp. butter
  • 1 tsp. sesame oil
  • 100g mangetout

  1. Drop the mangetout into a large pot of boiling salted water. Boil for 1-2 minutes and then drain and pat dry on kitchen towel.

  2. Heat oil in a wok. Add the shallot, chilli and lemon zest and cook until the shallot is softened. Add the pork and fry for a few minutes until cooked through, then add the cooked mangetout.

  3. Add the sesame seeds, sesame oil, butter and lemon juice and cook just until the butter melts into a sauce.

Remove a chilli from the recipe, if you like, and for a smoky flavour add a pinch of dried chilli flakes instead. Recipe serves 4.
