This tasty recipe for pork and mangetout cooked with lemon, chilli, sesame seeds and sesame oil has just the right amount of heat. Serve over noodles.
- 350g pork fillet, sliced
- 100g sesame seeds, toasted
- 2 shallots, sliced
- 2 red chillis, deseeded and very thinly sliced
- Zest and juice of 1 lemon
- 1 tbsp. butter
- 1 tsp. sesame oil
- 100g mangetout
Drop the mangetout into a large pot of boiling salted water. Boil for 1-2 minutes and then drain and pat dry on kitchen towel.
Heat oil in a wok. Add the shallot, chilli and lemon zest and cook until the shallot is softened. Add the pork and fry for a few minutes until cooked through, then add the cooked mangetout.
Add the sesame seeds, sesame oil, butter and lemon juice and cook just until the butter melts into a sauce.
