This is a wonderfully tasty main course that’s chock full of spice and flavour. Serve with some thin rice noodles.
- 1 kg crab, cleaned and claws separated
- 250ml water
- 6 deseeded red chillies
- 1 piece of root ginger
- 1 medium onion
- 2 garlic cloves
- 3 tbsp. vegetable oil
- 1 egg
- 1 tsp. sugar
- 1 tsp. salt
Chop the onion into rough pieces. Put the onion, garlic and chillies into a food processor or blender and blitz until pureed. Set these to one side.
Heat the oil in the wok and then add the chilli mixture. Cook for around thirty seconds then add the water. Lower the heat and add the salt and sugar and mix everything together well.
Add the crab pieces and stir to make sure the crab is fully covered. Cover, then simmer for ten minutes.
Break the egg into the wok and stir round quickly to coat the crab. Serve.
