This is a delicious recipe for green beans - fresh beans are coated in a delicious Chinese sauce and flavoured with garlic, ginger and dried chilli. The dish makes for an excellent accompaniment to stir fried pork or beef.
- 350g fresh green beans
- 2 garlic cloves
- 1 thumb-sized piece root ginger
- 1 dried red chilli
- 2 tbsp. each dark soy sauce and oyster sauce
- 2 tbsp. oil
Trim and chop the green beans. Mince the garlic cloves. Peel the ginger and mince. Finely dice the dried chilli.
Heat the oil in a wok. Fry the garlic, ginger and chilli together until they start to turn fragrant. Add the beans and stir to coat, add a glug of water and cover with a lid.
Cook the beans for 5-8 minutes until tender but still crunchy. Add the soy sauce and oyster sauce. Stir to coat and cook for another 2-3 minutes until any liquid thickens into a sauce. Serve immediately.
