Chinese Green Beans recipe

This is a delicious recipe for green beans - fresh beans are coated in a delicious Chinese sauce and flavoured with garlic, ginger and dried chilli. The dish makes for an excellent accompaniment to stir fried pork or beef.

Ingredients

  • 350g fresh green beans
  • 2 garlic cloves
  • 1 thumb-sized piece root ginger
  • 1 dried red chilli
  • 2 tbsp. each dark soy sauce and oyster sauce
  • 2 tbsp. oil

Directions

  1. Trim and chop the green beans. Mince the garlic cloves. Peel the ginger and mince. Finely dice the dried chilli.

  2. Heat the oil in a wok. Fry the garlic, ginger and chilli together until they start to turn fragrant. Add the beans and stir to coat, add a glug of water and cover with a lid.

  3. Cook the beans for 5-8 minutes until tender but still crunchy. Add the soy sauce and oyster sauce. Stir to coat and cook for another 2-3 minutes until any liquid thickens into a sauce. Serve immediately.

You can use this same cooking technique with different veggies - try broccoli, carrots or even cauliflower. Recipe serves 4.
