This delicious recipe for a roast Chinese duck is perfect for pairing with pancakes, hoisin sauce and shredded greens. It's an excellent dinner party starter, and it's actually really simple to make, too.
- 1 whole duck, innards removed, cleaned and patted dry
- 4 tbsp. runny honey
- 4 tbsp. soy sauce
- 1 tbsp. sesame oil
- 1 tbsp. rice wine
- 1 tsp. five spice powder
Heat the oven to 130C. Prick the duck all over with a skewer and pour a kettle of boiling water over the duck. Get rid of the water, put the duck on a rack inside a deep baking tray and bake for 2 hours.
Turn the heat up to 170C. Combine the honey, soy sauce, sesame oil, rice wine and five spice powder in a bowl. Bake the duck for 10 minutes at the higher temperature, brush with the marinade, bake for 10 minutes, brush again and bake for another 5-10 minutes until golden and crisp. Before serving, pour the rest of the marinade, if there is any, over the duck.
Leave the duck to rest for a little while before shredding.
