Runner beans are tossed with oyster sauce, soy sauce, garlic, ginger and chilli in this easy peasy side dish. Serve it with some roast chicken, or griddled steak.
- 350g runner beans, trimmed and sliced
- 3 tbsp. veg oil
- 2 tbsp. each soy sauce and oyster sauce
- 2 garlic cloves, minced
- 1 thumb-sized piece root ginger, minced
- 1 dried red chilli, crumbled
Heat oil in a wok over a medium heat. Add the garlic, ginger and dried chilli and stir fry for 2-3 minutes. Add the beans, toss to combine, add a few tbsp. water and cover. Steam for 8 minutes, or until tender.
Take the cover off the pan, then add the soy sauce and oyster sauce. Increase the heat and bubble for 2-3 minutes or until the sauce is thick.
