Chocolate chips and banana give this gooey bread pudding a delicious sweet flavour - and the whole thing takes just a few minutes to prepare. Just mix everything together and bake!
- 4 eggs
- 500ml milk
- 2 bananas, sliced
- 200g caster sugar
- 1 tbsp. vanilla extract
- 425g brioche, chopped into squares
- 175g chocolate chips
Whisk together the eggs, milk, sugar and vanilla until smooth. Preheat oven to 180C. Line a roasting tin with damped tea towel.
Add the banana, bread and chocolate chips to the custard and stir until well combined. Pour into a greased loaf tin, then put the loaf tin into the roasting tin. Put the tin into the oven and pour boiling water into the roasting tin so that it comes halfway up the sides of the loaf tin.
Bake the pudding for 1 hour or until a skewer inserted into the centre comes out clean.
