These soft, chewy cookies are packed with nuts, chocolate chips and dried cherries, while the brown sugar gives them a fudgey flavour and texture. The whole family is sure to love these cookies!
- 280g plain flour
- 220g butter
- 110g dark brown sugar
- 100g caster sugar
- 2 eggs
- 1/2 tsp. each vanilla and almond extract
- 340g chocolate chips
- 180g dried cherries
- 75g each chopped pecans and walnuts
- 1 tsp. bicarbonate of soda
- 1/2 tsp. salt
Preheat oven to 190C and grease a few baking trays.
In a bowl, sift together the flour, bicarb and salt. In another, beat the butter, caster sugar and brown sugar together until pale and fluffy. Beat in the eggs one at a time and stir in the extracts.
Stir the dry mix into the wet mix until just combined. Fold in the chocolate, cherries, pecans and walnuts and drop by the spoonful onto the prepared baking trays. Leave gaps between for the cookies to spread.
Bake for 12-15 minutes or until just set and crisp round the edges. Cool to the touch, then turn out onto a wire rack to cool completely.
