Chocolate Chip Nutty Banana Oat Cake recipe

Preparation Time: 20 minutes | Cooking Time: 35 minutes

This is everything you'd want from a cake - it's chocolate, oaty, sweet and nutty, with a fabulous texture. Serve it warm from the oven.


  • 250g mashed banana flesh
  • 250g plain flour
  • 225g butter
  • 200g caster sugar
  • 2 eggs
  • 125ml buttermilk
  • 1 tsp. vanilla
  • 80g porridge oats
  • 1 1/2 tsp. bicarbonate of soda
  • 1 tsp. salt
  • 75g walnuts, chopped
  • 40g dessicated coconut
  • 350g chocolate chips


  1. Preheat oven to 180C and grease a 20x30cm baking tin. Combine the flour, oats, bicarb and salt in a bowl. In another, cream the butter and sugar until pale and fluffy, then beat in the eggs one at a time, adding a tbsp. of flour if the mix threatens to curdle. Stir in the banana, buttermilk and vanilla.

  2. Fold in the walnuts, coconut and half the chocolate chips. Pour into the prepared baking tin and sprinkle evenly with the rest of the chocolate. Cover, then bake for 30-35 minutes or until a skewer inserted into the centre of the cake comes out clean.

Keep the nuts chunky if you like and for a more intense coconut flavour, add chunks of coconut cream. Recipe serves 8.
