Chocolate, Cola and Walnut Cake recipe

Preparation Time: 30 minutes | Cooking Time: 35 minutes

Cola adds a lovely sticky, sweet flavour to this chocolate cake - and walnuts add a yummy texture. The marshmallows just make things even better!


  • 400g caster sugar
  • 250g plain flour
  • 250ml cola
  • 225g butter
  • 3 tbsp. cocoa powder
  • 125ml buttermilk
  • 2 eggs
  • 1 tsp. bicarbonate of soda
  • 100g mini marshmallows
  • 75g chopped walnuts
  • 475g icing sugar
  • 3 tbsp. cocoa powder
  • 115g chopped walnuts
  • 1 tsp. vanilla
  • 6 tbsp. cola
  • 110g butter


  1. Preheat the oven to 180C and grease and line a 20x30cm cake tin.

  2. Sift together the flour, cocoa and bicarb. Stir in the sugar. Put butter and cola into a pan and bring to the boil, then cool to room temp, pour into the flour mix and stir to combine. Stir in the buttermilk and beat in the eggs, then fold in the walnuts and marshmallows. Spread in the baking tin and bake 30-35 minutes or until just set.

  3. To make the icing, put the cocoa powder, cola and butter into a saucepan and bring to the boil. Cool slightly, then stir in the icing sguar, walnuts and vanilla. Spread over the cake while warm.

If you want to omit the cola, you can do - you could always use something like ice cream soda instead! Recipe serves 8.
