These cracked, jaggedy looking cookies are a work of art! Chocolatey, soft, chewy and decadent, bake these cookies when you want a little taste of heaven.
- 200g self-raising flour
- Pinch of salt
- 350g milk or dark chocolate chips
- 90g butter
- 200g caster sugar
- Dash of vanilla
- 2 eggs
- Icing sugar
Sift together the flour and salt. In a bowl, beat together the butter and sugar until pale and fluffy. In another, melt 175g of the chocolate over a pan of simmering water. Once melted, leave to cool slightly. When cooled, pour the melted chocolate into the butter mix.
Beat the eggs in, one at a time, along with the vanilla. Sift in the flour and salt and mix until you have a smooth cookie dough, then fold in the remaining chocolate chips. Form the mix into a dough, then wrap in cling and leave to chill in the fridge or freezer. One firm, form the mix into 18 small balls.
Roll the balls in icing sugar until thoroughly coated. Place onto two baking trays, without flattening, and bake for 10-15 minutes or until spread, cracked and firm to the touch in a 180C oven.
